Seafood Chowder

A really creamy chowder loaded with flavor! Makes for a hearty meal all by itself. For those watching their waistlines, feel free to use fat free; milk, cream cheese and mushroom soup instead!!


     Ingredients 

     1 1/2 cups milk

     1 (8 ounce) cream cheese

     2 cloves garlic, minced

     3/4 can condensed cream of mushroom soup

     1 cup of seafood stock

     1 cup chopped green onions

     1 cup carrots cut to bite size 

     1 1/2 cups chopped potatoes

     1 teaspoon dried tarragon

     1/2 teaspoon black pepper

     1/2 teaspoon cayenne pepper

     1/2 pound shrimp

     1/2 pound white fish in bite size pieces

     1/2 pound calamari in bite size pieces

Directions

Place 1/2 cup milk, cream cheese, and garlic in a large pot over low heat. Cook and stir until blended.

Mix in soup, seafood stock, green onions, carrots, potatoes, tarragon and remaining milk.

Season with black pepper and cayenne pepper. Simmer 25 minutes. Do not boil.

Mix the shrimp, white fish and calamari and continue cooking for a further 10 minutes, or until seafood is opaque.
